Vegan, Gluten Free, and healthy muffins in 10min.
How can we sneak in some healthy stuff to our snacks? Our go-to is pancakes, smoothies and muffins. This recipe is one of my favorite because it's so simple, quick and healthy. The kids love these and they get both protein, magnesium, vitamins and veggies in one bite!

This is why I love muffins, pancakes and smoothies, you can put a lot of healthy vegetables and fruits in them and the kids will eat it.
Preheat oven to 350°F.
Smash all ingredients into a bowl
Spray muffin tin with preferable greaser/oil
Portion the ingredients into prepared baking cups/muffin tin.
Bake for 10-18 minutes, or until a toothpick inserted in the center of the muffins comes out clean. Remove from the oven and place the pan on a cooling rack for 5 minutes.
Serve warm. Or let the muffins cool to room temperature, then store in a sealed container for up to 3 days, or freeze for up to 3 months.
Ingredients
3 bananas
1/2 cup old-fashioned oats
1/2 cup hemp seeds
1/2 cup banana flour or flour of choice
1/2 cup grated carrots
1 1/2 tablespoons Cinnamon
1 teaspoons baking soda
Pinch of fine sea salt
